What Was Observed
Observed savory pastries to measure 59F at time of inspection. Measured ambient temperature of cold holding unit to measure 61F. Per PIC, they were delivered less than 4 hours prior to inspection. COS: pastries were relocated to a working unit measuring 41F or below.
