Mechanical dishwasher found operating at 25ppm chlorine sanitizer, below required 50ppm minimum. Restaurant must repair dishwasher and use manual warewashing until fixed.

Why This Matters
Improper dishwashing spreads pathogens across all dishes. Hepatitis A survives on improperly washed dishes for weeks. Causes recurring outbreak cycles.
What Was Observed
mechanical dishwasher measured at 25ppm of chlorine sanitizer solution, repair mechanical diswasher to ensure that at least 50ppm of chlorine sanitizer solution is despense through the final rensing cycle. In the meantime, please use the 3 compartment sink to set up your manual ware washing method as wash, rinse and sanitizer at the 3rd sink of at least 100ppm of chlorine or 200ppm of quaternary ammonia solution ( 1 tablespoon of bleach to 1 gallon of water)
