Inspector's Report
- chili sauce is now kept in walk in cooler - walk in cooler and foods inside the unit measured at 41F or below - sashimi unit and foods inside the unit measured at ~38-43F (raw fish measured at 38F; tare sauce measured at ~42F); top part of the unit measured at ~39F - proper cooling methods observed as evidenced by ice baths that were set up properly with foods (dashi) in metal containers measuring at <60F with cooling - no signs of rodents observed; door sweep has been installed at front door - proper food storage observed - fly light has been relocated
