Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Observed rodent droppings on the floor corner of the end of the front sushi station and on around the white reach in freezer/cooks line equipment in the kitchen. Per the staff, the facility has regular monthly licensed pest control service. Remove the rodent droppings from the facility floors. Thoroughly clean and sanitize the floors after removal. What Was Observed
Observed the prep sink in the kitchen providing hot water 111F and under. Observed the 3 compartment sink at the sushi station providing hot water measuring 106F and below. Ensure food related sinks provide hot water measuring 120F and above.

What Was Observed
Observed a food debris and grease accumulation on the deep fryer sides closer to the back wall, on the pillar/wall on the right of the metal table in the kitchen. Observed a grease and dust accumulation on on the pipes on the right of the ventilation hood. Thoroughly remove the food debris, grease, and dust accumulation from the affected surfaces.
