What Was Observed
1) Observed grime and grease build-up underneath and on the sides of the three compartment basins in the Deli area. *CLEAN, DE-GREASE and SANITIZE these surfaces. EDUCATE staff to monitor and be proactive in sanitizing these areas.*

1) Observed metal deteroriating with exposed holes in the cooling unit of the seafood walk-in cooler. *SEAL all holes, DO NOT use spray foam. Material must be durable, easy-to-clean, and nonabsorbent.*

What Was Observed
1) Observed grease build-up in the ventilation hood at the deli kitchen. There are grease drops forming at the edge of the hood. Manager told inspector that they have already scheduled the cleaning. *Ensure that grease formation in the ventilation hoods are kept at a minimum. CLEAN and DE-GREASE often.*
