Food contact surfaces: clean and sanitized
Why This Matters
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
Deli and Boar's head section: Observed several spray bottles of no-rinse sanitizer with inadequate amount of sanitizer. Staff had been preparing food since 5 am with inadequate sanitizer for 5 hours. Bakery section: Observed several spray bottles not dispensing sanitizer due to broken nozzles.

Floors, walls and ceiling: built, maintained and clean
Why This Matters

What Was Observed
Multiple structural issues including grease build-up underneath cook-line, exposed tiles on walls, bulging metal walls in walk-in coolers, water build-up on floors, and ripped door gaskets throughout various sections of the facility.
