Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed mayonnaise on shelf in refrigerator end dry storage room, however mayonnaise was 53.7F. Mayonnaise discarded, container had been previously opened and was half full,b earring "refrigerate after opening" on label. Please review holding temperatures with staff. Food safety guides provided.
