Inspector's Report

Inspector found severe roach infestation with live and dead cockroaches throughout facility, including in hand sinks and on food equipment. Staff unable to properly wash hands after killing roaches, hand washing facilities were blocked and lacked supplies, and facility showed poor sanitation with grease buildup throughout.

Roach Infestation
Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed a dead roach inside the basin of the back area hand sink. Observed a live cockroach nymph crawling on top of the white box freezer storing ice cream. Observed dead roaches on the floor underneath the 3-dr fridge, and a possible dead roach next to a wok at the cook's line. Per PIC, the facility never had a licensed pest control operator provide a treatment and has been self treating with sprays.

Improper Hand Washing
Sewage contains billions of pathogens including hepatitis A, norovirus, and E. coli. One tablespoon contains 100 million bacteria. Causes immediate severe illness.
The food worker on site is not able to properly wash hands after discarding gloves after being instructed to do so after killing a live adult roach with her hands.

Hand Washing Facilities Inadequate
Missing handwashing supplies forces employees to skip handwashing. Studies show only 31% of workers wash hands properly when supplies are inadequate. Spreads norovirus to hundreds.
Front counter hand sink has an empty paper towel dispenser. Main prep area hand sink also has an empty paper towel dispenser and was being blocked with a tall stack of boxes being stored in front of it. When boxes were removed, the basin was observed to be dry from lack of use.
