Inspector's Report
Inspector found staff member eating in the kitchen during inspection. A glass 2-door refrigerator was holding food at 44°F instead of the required 41°F or below, and eggs purchased that day were stored at room temperature. No sanitizer bucket was set up at time of inspection, and non-operational equipment including a prep-top refrigerator and wooden cutting board were present on premises.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
No sanitizer bucket set up at time of inspection, please ensure sanitizer bucekt is set up at any time with facility is open. Please ensure sanitizer bucket is set up prior to start of prep each day, and changed every 4 hours or as needed. Please train staff on use of testing strips.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Glass 2 door refrigerator holding at 44F, adjusted during inspection. Observed eggs purchased earlier today stored at room temperature, which were transferred to refrigerator. Please ensure potentially hazardous food is stored at or below 41F at all times except during preperation for immediate service. If refrigerator is not holding at or below 41F, please have refrigerator serviced by licensed technician to ensure food is holding at safe temperature, do not use if machien cannot hold at or below 41F.
