Why This Matters
Improper dishwashing spreads pathogens across all dishes. Hepatitis A survives on improperly washed dishes for weeks. Causes recurring outbreak cycles.
What Was Observed
mechanical dishwasher only measured at 25ppm of chlorine, repair the mechanical dishwasher to provide at least 50ppm of chlorine sanitizer solution at the final rinsing cycle. Ensure to set up a manual ware washing method to wash rinse and sanitizer at the 3rd sink of at least 100ppm of chlorine or 200ppm of quaternary ammonia solution.
