Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Observed prep cooler under the hot holding unit ambient temperature at 44 F and the food in food wells measured between 50 to 61 F. COS - TPHC will be done for the food in prep cooler. Submit an SOP and list of food for TPHC on the wells of prep cooler.
