Why This Matters
Improper dishwashing spreads pathogens across all dishes. Hepatitis A survives on improperly washed dishes for weeks. Causes recurring outbreak cycles.
What Was Observed
Obtain and keep on site test strips -or- reusable disc to monitor temperature of high-temperature warewasher. NOTE: high-temperature warewasher functioned properly at time of inspection, achieving a utensil-surface contact temperature of at least 160F. - NOTES NOTES: -handwash sinks stocked with soap and paper towels -no evidence vermin activity -hot water available at least 120F -sanitizing solution measured 200ppm quat; test strips available -refrigerated potentially hazardous food (PHF) measured 41F or less -food items stored at least 6 inches off of floor -facility maintained in clean and sanitary condition Contact inspector with any questions.
