Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Potentailly hazardous foods at serving lines observed to be held at elevated temperatures. Per PIC, food had been relocated from walk in to prep top coolers at 7:45 AM. Cooked eggs observed to be 56.5F, peppers 48.3, tuna salad 45.7, cooked chicken 44.7. Digital display on refrigerators observed to read 54F.
