What Was Observed
1. WASH, RINSE, and SANITIZE ice machine when no ice is present to prevent contamination.
-Observed the top interior of the ice machine does not appear clean and residue accumulation can be observed.

Why This Matters
Household equipment cannot withstand commercial use and harbors bacteria in cracks. Latex gloves cause severe allergic reactions in sensitive individuals.
What Was Observed
1. WASH, RINSE, and SANITIZE equipment on a daily basis to remove residue accumulation.
-Observed unclean equipment throughout the facility including but not limited to the tofu refrigeration unit, the seafood/fish tanks, meat display cases. 2. DISCONTINUE lining the shelves with these materials as vermin may harbor in these materials and can block air flow in refrigeration units.
-Observed aluminum foil on the bottom of the shelving for fryers and cardboard lining the shelves and one window that is missing in the meat display case, the sales floor, and the back storage areas such as but not limited to the frozen durian freezer. 3. DISCONTINUE using duct tape as it is not easily cleanable.
-Observed duct tape is used on cabinets above the cutting board table in the meat area. 4. CLEAN or REPLACE mat and REPAIR handle.
