Follow-up reinspection found previously cited violations corrected including proper refrigeration temperatures and food storage. New violations discovered include improper thawing of vacuum-sealed seafood, unapproved vacuum sealer on premises, unpermitted washing machine installation creating tripping hazard, and improper use of sponge on food contact surfaces. Most issues corrected on site with follow-up required for equipment approvals.

Approved Thawing Methods in Use
Why This Matters
Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
What Was Observed
OPEN all frozen packaged seafood and remove COMPLETELY from packaging PRIOR to thawing to prevent a Botulism hazard. Observed several packages of previously frozen seafood in commercially vacuum sealed bags (fish pieces, shrimp) thawing in refrigeration in opened bags. COS - seafood products were immediately removed from bags completely and returned to thawing under refrigeration outside of the bag.

Why This Matters
Household equipment cannot withstand commercial use and harbors bacteria in cracks. Latex gloves cause severe allergic reactions in sensitive individuals.
What Was Observed
1) IMMEDIATELY remove the unapproved vacuum sealer and associated bags from the facility that was observed in the storage area. 2) If keeping the washing machine that was installed after the SFDPH-Plan Review process without DPH approval, OBTAIN necessary approvals from applicable agencies for the installation of the washing machine in the warewash and install to prevent a tripping hazards and to allow full access to the hand wash sink. PROVIDE proof of a plumbing permit obtained to Katie.dea@sfdph.org within 7 days. 3) SEND specification sheets to Katie.dea@sfdph.org for the toaster oven observed on this date that is used to toast seaweed for review.
