Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Display fridge at cook line next to cash register holding at approximately 50F ambient. Pudding, mango, milk all measured at 55F. Per PIC those items were made 1 hour earlier and transferred to working refrigeration. All other refrigeration holding at or below 41F, other items in this refrigerator were non-PHF pre packed drinks and cakes.
