Why This Matters
Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
What Was Observed
1. DESIGNATE an area for employee items, LABEL this area, and KEEP all employee items in this area. DISCONTINUE use of Raid, REMOVE from facility, and HIRE licensed pest control services if necessary. -Observed employee medicines are stored in the shelving above the food preparation sink and a can of Raid being stored underneath the food preparation sink.

What Was Observed
1. DISCONTINUE using hot holding equipment to cook. Instead use oven or grill to cook foods to ensure they reach the correct internal temperature. -Observed cut tomatoes and onions with Saran Wrap on them in the hot holding unit. Per employee, the items were cooking and would be cooled today and blended tomorrow for salsa. Corrected on site - Per Inspector's request, the food was removed and properly heated in the oven.

-Observed wiping cloths were stored on food preparation counters such as cutting boards lacking the correct amount of sanitizing solution and measured 25 ppm chlorine bleach solution.
