Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
-Observed numerous rodent droppings throughout the kitchen on countertops, on ledge adjacent to where food preparation occurs, on tops of food containers, and on shelving.

-Observed no thermometers were available in the refrigeration units.

PROPER HOT AND COLD HOLDING TEMPERATURES
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
1. MAINTAIN boba at 135F or above for hot holding. -Observed boba being held at maximum hot temperature of 125F when 135F is required. 2. MAINTAIN milk at 41F or below. Immediately discontinue storing at room temperature. -Observed half and half containing milk and cream on the counter measuring 77F at time of inspection. Per employee, the half and half had been out at room temperature for 1 hour.
