Observed old mice droppings on floor in corner under of dry storage racks located in rear of facility. Operator demonstrated most recent pest control service reports. Clean and sanitize all contaminated areas using a 100ppm chlorine sanitizing solution.

Observed no sanitizer bucket prepared while active food preparation taking place. Ensure to prepare a sanitizer bucket using a 100ppm cholorine solution or 200ppm quaternary ammonia to ensure proper sanitation. Replace sanitizer buckets as needed or every 4 hours.
