Obtain a probe thermometer and use to verify the temperatures of the rapid cooling of the soy milk. On this day, observed 2 x 5 gallon containers of cooked soy milk with internal temperatures above 135*F cooling without any temperature controls. Placed a ladle in one of the containers for stirring and reviewed the rapid cooling posters. - NOTES Continue removing all of the outdoor metal debris and plastic buckets. Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
No readily available sanitizer solution was observed upon arrival. Fresh chlorine/bleach was prepared and tested with inspector's test strips. Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Discontinue thawing frozen raw foods without temperature controls. Use 1 of the 4 approved methods.

FOOD STORAGE; FOOD STORAGE CONTAINERS IDENTIFIED
Improper storage allows pest access and temperature abuse. Food on floor contacts contaminated water during cleaning. Expired foods cause illness.
Observed bins of raw food being stored directly on the floor, including underneath the hand sink that was dripping clean water from the knee peddle. They were all relocated to the walk-in or prep-sink.

Sewage contains billions of pathogens including hepatitis A, norovirus, and E. coli. One tablespoon contains 100 million bacteria. Causes immediate severe illness.
Observed workers touching cooked foods at one station and proceeded to perform activities at other stations, none of the food workers were wearing gloves, and not a single hand wash event took place during the inspection. All workers were directed to wash hands. Discussed the issue of wearing gloves, using utensils, and to prevent cross contamination between raw and cooked foods, and with shrimp as it is an allergen.
