Inspectors found vermin activity including fruit flies at the bar and a rodent dropping in kitchen equipment, along with fish stored at unsafe temperatures between 45-48°F. Multiple sanitation issues were noted across both Beach Chalet and Park Chalet kitchens including grease buildup and improper sanitizer concentration.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed fruit flies in the Park Chalet bar area. Observed one dry rodent dropping in a container underneath the fryer service compartment at the Park Chalet kitchen. Operator discarded and sanitized the container. CONTINUE to work with your licensed pest control to actively eliminate vermin presence.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed no concentration in the sanitizer buckets in the Beach Chalet kitchen. Operator found out that the quat ammonium sanitizer is not dispensing the proper concentration. They have reverted to bleach sanitizer until the technician arrives to fix. Quat ammonium is dispensed properly in the Park Chalet kitchen. ENSURE that there is adequate sanitizer available for all food prep areas.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed several drawers at the cook-line with raw fish (salmon, tuna, cod) in the Beach Chalet kitchen with ambient temperatures of 45-48 F. ENSURE that all the PHFs attain a temperature of 41 F or below.

Observed grease in the service compartment in the first fryer in the Beach Chalet kitchen. Observed grease build-up in the service compartment in all the four fryers in the Park Chalet Kitchen. CLEAN and DEGREASE.
