Inspector's Report

Inspector found cooked pork at unsafe temperature (51°F) and old mouse droppings in storage areas and under counter. Facility also lacked required quaternary ammonia test strips for sanitizer monitoring.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed few old mouse droppings on the following locations. 1) floor next to water heater in back storage area 2) Underneath sales counter. COS- Cleaning was initiated at time of inspection. Last pest control service was done on 11/21/2025.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed cooked pork in the container temping 51F in plastic container at room temperature at food prep table. As per PIC it was out 20 minutes ago and will be used in sandwiches. COS- Operator relocated items under drawer cooler.
