What Was Observed
Observed cooling bacon being stored on a baking rack in the back dry goods storage area. This area is not approved for food prep as the ceiling is missing in a section that leads to the attic space. Discontinue this unapproved practice. COS - Employee relocated the bacon to the back food prep area.
