Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
Observed mouse droppings on the floor in the vicinity of the garbage cans downstairs. The operator has monthly pest control. Clean the droppings, sanitize the affected area, and continue regular pest control at the facility.

Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured milk at 50F and roast beef at 50F in the bottom portion of the right side, large food preparation coolers on the cooks' line. The milk had been there a few hours and was moved to a working cooler. The roast beef had been there overnight and was discarded.

Measured hot water at 107F at the 3-compartment sink in the bar. Provide hot water of 120F to the sink. Measured warm water of 77F at the handwash in the right side (operable) restroom downstairs. Provide warm water adjustable to between 100F and 108F to all handwash sinks.

Observed an unsecured CO2 cylinder by the cash register at the west wall in the kitchen. Chain up or otherwise secure all CO2 cylinders so that they cannot fall over.

Observed a submerged drain line inside the floor sink beneath/beside the dishwash machine in the kitchen. Elevate all drain pipes at least 1" above the rim of the floor sink. Observed a leak from the backflow prevention device on the mop sink downstairs. Repair the leak.
