Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Pizza prep top stocked 2 hours earlier was holding at 48F, all food moved to working refrigeration. Please ensure all potentially hazardous food is held at or below 41f. Please have refrigerator serviced to verify that it holding at or below 41F and call inspector for follow up.

FOOD CONTACT SURFACES: CLEAN AND SANITIZED (CORRECTED ON SITE)
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Facility had been open for more than 4 hours without sanitizer bucekts set up. Sanitizer bucekts set up (1 per station) during inspection ,.food safety guides in English and Spanish provided. Please ensure sanitizer bucekts are set up at all times when facility is open, and changed every 4 hours or as needed. Train staff on use of test strips. Ware wash machine in bar is producing low sanitizer, sanitizer reservoir says ammonia. Ware wash machine in kitchen is producing 50 ppm chlorine. Observed heavy buildup of grime inside ice machine, please clean and sanitize, train staff to clean and check bi weekly.
