Facility closed due to severe rodent infestation with droppings found throughout bar area, dry storage, and kitchen. Additional violations included temperature abuse of potentially hazardous foods, contaminated ice machine with mold, and improper cooling methods.

Observed black/orange mold like substance inside interior of ice machine by deflector panel throughout the panel. The ice is being adulterated by dripping water through the substance inside ice machine onto ice observed at time of inspection.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed a severe rodent infestation at the facility as evidenced by: Numerous fresh rodent droppings on the front bar on the multiple shelves where drink shaker containers and other bar utensils are stored. Numerous Rodent droppings in dry storage area on the rack and on the floor along the wall and on the shelves where wine bottles are stored. Rodent droppings under three compartment sink in the back kitchen area.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed cooked potatoes in a metal container measuring 54F at room temperature in the kitchen since 8 am in the morning. Observed ground meat measuring 45F and marinated chicken measuring 46F in drawer cooler placed two hours ago (ambient 47F).

PROPER COOLING METHODS
Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
Observed three plastic containers of vegetable stock soup being cooled in plastic containers using ice wands measuring 140F for more than an hour. Observed cooked beef container measuring 82F in walk in cooler cooling for more than 2 hours ago as per operator.
