Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Ground beef in the walk in refrigeration unit was measured at approximately 50 degrees F. Ensure that all potentially hazardous foods that are rapidly cooled are placed inside shallow stainless steel pans to facilitate proper heat transfer. Discontinue using any plastic containers for rapid cooling. Note: Any salad dressings that are potentially hazardous should be placed inside refrigeration units or ice baths to maintain at below 41 degrees F.
