- proper cold holding temperatures observed: foods in the prep cooler across from cookline and ambient temperature measured at 41F or below - proper cooling methods observed: foods in cooling process were noted on a log, about ~1.5 hours into the cooling process in shallow metal containers with ice - food observed in good condition - non food contact surfaces cleaner (see #33 for remaining cleaning required); hood cleaning occurred on 8/16/25 - proper utensil storage observed at the cookline
