Why This Matters
Dirty wiping cloths spread millions of bacteria across surfaces. Cloths used on raw meat spread Salmonella and E. coli throughout kitchen.
What Was Observed
Observed partially dry towels placed on the cutting board tops at the prep area of the kitchen. The partially dry towels were relocated. Ensure wiping cloths used for food contact surfaces have an adequate amount of approved sanitizer solutions. When the wiping cloths for food contact surfaces are not in use, store them in the approved sanitizer solutions.
