Observed raw frozen meats thawing with no temperature controls throughout the back area. Only use 1 of the 4 approved methods for thawing.

Keep wiping cloths fully submerged in the sanitizer solution, and ensure that it is not overly concentrated. Always wash and dry cloths by machines. Discard them when they change color and are no longer easily cleanable. HANDS CLEAN AND PROPERLY WASHED; PROPER GLOVE USE (CORRECTED ON SITE)
Sewage contains billions of pathogens including hepatitis A, norovirus, and E. coli. One tablespoon contains 100 million bacteria. Causes immediate severe illness.
Observed a worker fail to discard gloves after picking up debris from the floor. She was directed to discard gloves and wash hands. Observed another worker fail to discard gloves after picking up raw foods and proceeded to continue with other food preparation. She was directed to discard gloves and wash hands. Obtain more dedicated (preferably metal) utensils such as tongs to avoid hand contact with all food ingredients to help prevent a cross contamination, especially with shrimp as it is an allergen.
