Missing valid food handler cards for all employees and improper cold holding temperature of breaded chicken katsu at 48-51°F. Temperature violation was corrected on-site but food handler certification remains outstanding.

Proper Hot and Cold Holding Temperatures
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed the breaded raw chicken Katsu with temperature range of 48 F to 51 F. It is adjacent to the hot holding unit. COS- Operator is thinking of removing some of the hot holding compartments next to the refrigerator to make sure that the refrigerator can attain 41 F or below.
