What Was Observed
Observed the breaded raw chicken Katsu with temperature range of 48 F to 51 F. It is adjacent to the hot holding unit. COS- Operator is thinking of removing some of the hot holding compartments next to the refrigerator to make sure that the refrigerator can attain 41 F or below.
