Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
1) Observed various ready-to-eat foods (Fresh & Ready) at ambient temperature of 57 F to 64 F at the Turbo Air open display refrigeration unit. According to operator the items were delivered the day before and have been in this temperature for more than 24 hours. The warning sticker for this equipment stated that the defrost cycle can hit 50 F range. This is already 9 degrees over the minimum temperature for refrigeration. COS- Operator discarded the items. *Keep all PHFs in refrigeration at 41
