Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Raw meat and other potentially hazardous foods were measured between 50–52°F in the prep top refrigerator located across from the grill station. According to the operator, the food had been placed there less than an hour prior to inspection. The ambient temperature inside the refrigerator also measured between 50–52°F.
