Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed dried pork skin out at room temperature. Per PIC the pork skin is dried for 4-6 hours at ambient temperatures. DISCONTINUE this unapproved practice. PIC voluntarily discarded the pork skin and agreed to discontinue drying the pork skin.
