All hand sinks were fully stocked with warm water at 100°F, ware wash and prep sinks had hot water at 120°F, and cold holding was maintained below 41°F. Equipment, floors, walls, and ceilings were clean and well-maintained, and staff properly managed time-controlled batter by discarding it within 3 hours.
