Inspector's Report

Multiple temperature control violations were found including eggs and tofu stored on the floor without refrigeration, and hot & sour soup held at unsafe 95°F. Raw frozen chicken was improperly thawed at room temperature on the floor. Two inoperable refrigerators remain on premises and must be removed.

Improper vacuum packaging creates anaerobic conditions allowing Clostridium botulinum growth. Botulism is fatal in 5-10% of cases. Causes paralysis and respiratory failure.
Discontinue thawing of raw frozen meats at room temperature; observed frozen chicken just delivered per PIC being stored directly on the floor. It was placed in a cooler per inspector's request.

Observed boxes of eggs and tofu being stored on the floor with no temperature controls. They were placed in a cooler per inspector's request. Observed "Hot & Sour" soup being held inside a warmer with an internal temperature of 95*F; it was VC&D as PIC stated it is always made fresh each day - always discard of unwanted food at the end of the shift.
