Inspector's Report

Inspector found several violations including obstructed handwashing sink, improper cooling methods, missing sanitizer stations, cross-contamination with raw chicken above ready-to-eat foods, and food stored on floor. Most violations were corrected on-site with operator education.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed no sanitizer available at the manual ware-washing station. Employee was actively washing dishes without the sanitizer available for the three-step method. COS- Operator educated the employee and inspector also showed how to make sanitizer for manual ware-washing. Observed no sanitizer bucket available at the food prep areas.

Raw chicken drips contaminate everything below with Salmonella and Campylobacter. Cross-contamination causes massive outbreaks affecting hundreds.
Observed raw chicken and chicken kabobs on the top drawer of the cook-line refrigeration unit above the cooked cauliflower and fries. COS- Operator relocated the chicken to the bottom.
